The grain looks rather coarse and the eye-catching, white fatty parts contribute to defining a delicious organoleptic quality.<\/p>\n<p>We achieve such quality by carefully processing selected front cuts of pork coming from hogs farmed locally in Emilia-Romagna and Lombardy. We add to the minced meat the right quantity of salt and pepper and, peculiar touch, some nutmeg, garlic paste, and high-quality Gutturnio wine.<\/p>\n<p>The final mixture is then filled into natural casings that have the unique feature of being fat and thick enough to  preserve and protect  the full-rounded taste. The aging lasts 30 days and is promoted by the effective natural micro-climatic environment of our cellars.<\/p>\n<p>The Casereccio (homemade) salami is the protagonist of your table and the crown jewel of your appetizer plate.
