Our coppa production offers a well-diversified organoleptic range capable of satisfying every palate and every need. This delicious salami reveals an exquisite and peculiar taste that varies in intensity depending on the characteristics and timing of its aging and the use of different meats, which come from the upper part of the pig’s neck and from the shoulder. They are selected from highest-quality swine of controlled geographical origin, all processed by the expert hands of our artisans. Our coppa has a variegated flavor ranging from the sweetness and delicacy of short-aged products, matured in the natural microclimate of our cellars, and up to the aromatic and refined intensity of long-aged meats, in some cases even more unique and delicate due to refined breeds, such as the Parma black pig.
