Ein intensiver und k\u00f6stlicher Geschmack zeichnet diese Salamisorte aus, die sich mit ihrer ziemlich groben K\u00f6rnung pr\u00e4sentiert und bei der das Wei\u00df der Fettteile hervorsticht, die zur Definition einer k\u00f6stlichen organoleptischen Qualit\u00e4t beitragen.<\/span><\/p>\n

Es wird aus unserer sorgf\u00e4ltigen Verarbeitung von Schweinefleisch gewonnen, das ausschlie\u00dflich von Bauernh\u00f6fen in der Emilia-Romagna und der Lombardei stammt und nur aus den Vorderteilen des Tieres gewonnen wird. Dem Hackfleisch wird neben der richtigen Menge Salz und Pfeffer auch die k\u00f6stliche Besonderheit der Muskatnuss hinzugef\u00fcgt, der Beweis f\u00fcr eine Prise Knoblauch und das alles mit dem hochwertigen Gutturnio-Wein gefiltert.<\/span><\/p>\n

Die so erhaltene Endmischung wird in Naturd\u00e4rme gef\u00fcllt, die die Besonderheit haben, fett und dick zu sein, um den gesamten Geschmack besser bewahren und sch\u00fctzen zu k\u00f6nnen. Seine optimale Reifung, die in der Umgebung unserer Keller stattfindet, in denen ein effektives nat\u00fcrliches Mikroklima herrscht, muss 30 Tage dauern.<\/span><\/p>\n
